I love the taste of pumpkin. It isn’t unusual for me to make something pumpkin flavored even when it isn’t fall. While I love pumpkin pie, I really love to see what kind of twist I can put on pumpkin. This recipe was born when I was craving pumpkin but I didn’t want regular pumpkin pie. Taking a few of my favorite recipes, and combining some of the things I loved most from each, these pumpkin bars were born.

How to Store Spice Bars

The pumpkin spice bars will last about 3 to 4 days when stored correctly. Once the bars have cooled, you can keep them in the baking dish or you can move them to an airtight container. If keeping them in the baking dish, it is important to use the lid that comes with the dish or you can wrap it well in plastic.

Can You Freeze These Pumpkin Pie Squares?

If you have read some of my other recipes, you know I am big on freezing foods that we will not finish all of. I also like to keep foods in the freezer so I can take it out whenever I want it without having to worry about the time it takes to make it. If you are worried about some of these pumpkin pie squares spoiling before you can eat them all, storing them in the freezer is a great idea.

I recommend cutting the squares first. Once the pieces are cut, wrap each piece in plastic wrap. I like to put the pieces together in a freezer bag. This gives extra protection against freezer burn and it also keeps the pieces together. This makes it easier to find. Then write what is in the bag and the date. The pumpkin pie squares will stay good in the freezer for up to 6 months.

Can I use fresh pumpkin in these pumpkin bars?

If you like to make your own pumpkin puree, you certainly can. It is more economical to make your home and you control what type of pumpkin you prefer. While it is more time consuming to make fresh pumpkin puree, you can make a batch and store it in the freezer for desserts like this. If you make your own pumpkin puree you will want to make sure you get the consistency to resemble the canned version.

Ingredients for pumpkin spice bars

  • flour
  • old fashioned rolled oats
  • kosher salt
  • baking soda
  • sugar
  • brown sugar
  • unsalted sweet cream butter
  • vanilla extract
  • cinnamon
  • nutmeg
  • ground gingers
  • cloves
  • salt
  • eggs
  • pumpkin puree
  • Evaporated Milk

How to make pumpkin pie bars

Preheat oven to 350 degree’s and line a 9×13 baking dish with parchment paper

In a large mixing bowl, whisk together the flour, oats, salt, and baking soda together

Mix in 1/2 C sugar and 1/2 C brown sugar in with the dry ingredients

Mix in the melted butter and vanilla into the dry ingredients and stir until evenly moist

Press half of the mixture into the baking dish and bake in the oven for 15 minutes

Once baked, allow to cool completely

Pumpkin Pie Directions:

While the crust is baking, using a standing mixer, mix together 1/2 C sugar and 1/2 C brown sugar, cinnamon, nutmeg, ginger, cloves, and salt until combined

Mix in the two eggs, two egg yolks, vanilla and mix until combined

Mix in the pumpkin puree and milk until combined

Sprinkle remaining crust on top of the pumpkin pie mixture

Bake in the oven for 25 minutes or until the crust is golden and the center jiggles slightly

Allow to cool completely before enjoying!

    Ive made this recipie 5 times and it never fails to be good! Unfortunately mine is always alot uglier than the photos, i can never get the nice neat layer lines
