The star of this simple recipe is beets. They aren’t just tasty they’re also really good for you! The intense ruby red with a hint of magenta color of beets (looks like Alizarin Crimson paint to me!) is due to their pigments called betalain which is anti-inflammatory. Beets also contain nitrates which is converted into nitric oxide (NO). Nitric oxide is great for cardiovascular function. Long story short, beets can be helpful in reducing blood pressure and atherosclerosis, reducing the risk of diabetes, dementia, among others.
Start by Roasting the Beets
Peel the beet or beets. We’re going to need about a cup cubed. So just peel them and then cut them into quarters. Slice a few shallots into sections about a half-inch thick or use onions if you don’t have shallots on hand. And peel two to three cloves of garlic.
Place the beets, shallots (or onions), and garlic in a small-ish or medium-sized baking dish, drizzle with olive oil and sprinkle on the salt, pepper, and rosemary. Bake at 350 degrees F for about 30 minutes, until the beets are tender.
When finished baking, let everything cool down just a bit and then scoop everything into a high-powered blender. Add the plant-based milk and puree until smooth and creamy. Add more or less milk if needed for the right consistency.
This is delicious as the sauce on a spring flavors pizza! It would also be good in a pasta dish!

Sprinkle on the salt, pepper, and rosemary.
Bake at 350 degrees F for about 30 minutes until the beets are tender.
Allow to cool just a bit and then scoop into a high-powered blender. Add about 3/4 cup of plant-based milk. Use more or less milk to get the desired consistency.
Puree until the mixture is very smooth and any beet chunks or pieces are gone.
Use in pasta as a sauce or on pizza.
This sauce recipe can be doubled or tripled as it is. Just taste test for the salt and pepper and adjust to your liking.
Extra sauce can be frozen in any air-tight container for up to a few months.

This 20-minute creamy beet pasta sauce is made with cooked beets, coconut milk, cashews and lemon zest. Naturally vegan, it can be served with regular or gluten free pasta for an easy weeknight meal. Oh how I love beet pasta sauce.
No need to peel before or after baking. The skin, which is perfectly edible, just seems to disappear during the baking process. The trick to pan-roasted beets is to drop the temperature a bit. I always roast potatoes, Brussels sprouts, carrots, and pretty much all the other veggies at 425 degrees Fahrenheit.
How Does Beetroot Affect Pasta? Beetroot elevates pasta with its natural sweetness, earthy flavors, and, most notably, its bright pink color. This not only makes the dish a visual treat but also infuses it with the health benefits of beets, including fiber, vitamins, and minerals.
Roasting beets deepens their natural sugars while tempering bitterness. Bake whole, wrapped beets at 400°F for 60-75 minutes until easily pierced by a fork. Allow to cool before peeling and juicing. Incorporating roasted beets creates a smoother, mellower, almost nutty-flavored blended juice.
One of the reasons for this is that beets can absorb a lot of minerals from the soil in which they're grown, giving them an earthy and sometimes sweet or bitter flavor, depending on how they're cooked. Beets are delicious roasted, grilled, microwaved, steamed, boiled or air-fried.
Steaming in the oven rather than baking helps preserve more of the healthy vitamins and minerals in beets. This method also helps beets better retain their beautiful, vibrant color.
You can even enjoy them raw, either sliced thinly or grated. Choose beets that feel heavy for their size with fresh, unwilted green leafy tops still attached, if possible. Because dietary nitrates are water-soluble, it's best to avoid boiling beets if you'd like to maximize their nitrate content.
